by hand. Still does.
In 2008, Zane Caplansky opened a deli, built on the search for a great smoked-meat sandwich. The meat, the pickles, the rye, and the mustard were all made in-house, all by hand. People came for the meat and kept asking about the mustard.
So he put it in a jar. Same recipe, same hands, now sitting on your table instead of his counter.
